What is the specific difference between a bikini and a 1-piece swimsuit?

a 1-piece swimsuit and bikini is nearly the same in terms that they both covers the boobs and bottom, only that the 1-piece stretches over the girls’ tummies. So why is it that girls wear 1-piece over bikini?

The answer is in your question. Some girls don’t like to reveal their middle half so they use one-pieces. Others aren’t comfortable revealing their stomachs, but they could wear the bathing suits with its sides cut out and still be like a one-piece. Bikini’s are more revealing. Not all one-pieces are tight, but they do have to be able to be held up so they aren’t going to be saggy.
